WHere is a simplified version of a cocktail found on the seasonal cocktail list. Designed as a large-volume prepared mix which is loaded with flavours of a festive period, which makes it ideal for your celebration. Save the extra syrup you can use for morning drinks, sweets, or to make additional servings of bikinis.
The Bikini Cocktail
Yields 10 people
Ingredients for the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Cocktail (makes 850ml, serving 10)
400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (see above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Directions
To prepare the Citrus Syrup: Put all the components into a pan, heat until it reaches a simmer, stirring to dissolve. Then, turn off the burner and leave to cool completely. Pour into a sealable bottle, close it and store chilled, it will last for about one month.
Preparing the Batch Mix: Mix all the spirits and syrup in a sizeable container, leave to sit for one hour, then strain preferably using cheesecloth, to ensure it's fully clarified.
When ready to serve: Measure 85ml from the cocktail base into your mixing glass filled with ice, and agitate carefully for a minute to cool it down. Pour to a cold coupe glass or similar, top with the cranberries and finish with a light spray with the mandarin essence over the drink.
